Pantone Has Declared 2023 The Year Of Viva Magenta. Here’s Where To See, Sip And Savor This Vibrant Color In Los Angeles
Flour, sauce, cheese and heat. That’s the basis of the most beloved food on earth. Anyone who knows me knows I devote lots of time here in Los Angeles eating and thinking and writing about pizza. Several years ago, I spent weeks at a world-famous pizza academy in Marina Del Rey training to become a master pizzaiolo, and I’ve traveled the world writing about the finer points of charred crust and bubbled mozzarella.
At home, I’ve never had the right equipment. Brick ovens are way too big and expensive for me to consider. And even my powerful workhorse-of-a-grill can’t get to the right 800-plus degree temperature to bake a perfect pie. But I recently played around with a portable propane-powered pizza oven from Ooni and I’m not sure my life will ever be the same.

With 16 inches of cooking space and a powerful flame that heats to 950 degrees, the Ooni Koda 16, ... [+] right, can blister your pies to perfection.
The Ooni Koda 16 is a lightweight, easy-to-use gas oven that’s thousands of dollars less than a dedicated brick or stone oven, and the results are just as delicious. For around $500, the Koda 16 heats to the right temps (over 900 degrees), and has enough surface space — 16 inches — to let you rotate and maneuver the pie without turning it into a wrinkled mess. Ooni actually guarantees great pizzas for up to 60 days. The Koda 16 is also an excellent way to flame-cook steaks, fish and vegetables. There’s a reason the Koda 16 frequently tops the lists of best pizza ovens, including those at The New York Times’ Wirecutter.
Founded in 2012 by husband-and-wife team, Kristian Tapaninaho and Darina Garland, Ooni is based in Edinburgh, Scotland. Since I kept seeing Ooni products popping up during the pandemic — at farmer’s markets, pizza businesses and at friends’ homes — I wanted to learn more so I checked in with Garland, who is co-founder and co-CEO.
Secrets To Cooking Pro Pizza At Home: The Best Gear, Recipes And Tricks
Ooni co-founders Darina and Kristian Garland. "Uuni" means "oven" in Finnish but the company changed ... [+] the name to the phonetic spelling to make it more clear.
Pizza is so simple to make but the variations (and quality) are endless. What should people specifically know about getting the best experience from their Ooni?
Darina Garland: The beauty of pizza is that it’s a food universally enjoyed, but one that can never be perfected. It’s an endless journey of discovery into the wealth of different pizza methods, toppings and styles that exist — there’s a preferred pizza path for every kind of outdoor cook.
Buy Stoke Gas Pizza Oven
The first decision is the fuel type that suits your style — the convenience of gas power allows you to just fire up and go, with minimal cleaning and little fire management, so you can just focus on baking the pizzas. Cooking over wood and charcoal is a treat for the senses; the crackle and scent of the fuel and the satisfaction of building and maintaining that perfect fire. Many people chose a multi-fuel oven like the Ooni Karu 12 or Ooni Karu 16 to have the best of all worlds - wood, charcoal or the gas-burner add-on.
Start simple — master a dough recipe like Ooni’s basic or cold-proof dough, then once you’re confident with baking that, explore other styles like New York or Detroit, or play around with different flour types and hydration. Having the right tools will also make your pizza journey so much easier - essentials like an infrared thermometer and peels for launching, turning and retrieving will have you cooking like a pro in no time.
The online Ooni Community contains a wealth of knowledge from passionate home pizzaiolos, and is a great place to troubleshoot and learn — there’s no pressure though, you can just make a really great pizza and stick with that method or you can totally immerse yourself in the wonderful and varied world of pizza.

Darina Garland: Naturally, our years of experience in developing home pizza ovens has allowed us to keep learning and building knowledge. We’ve come a long way from the humble beginnings of our original model, which Kristian created in our small backyard. I still maintain the pizza we cooked in it was some of the most delicious we’ve ever eaten.
Our latest models have cutting-edge technology like the revolutionary L-shaped gas burner for more even cooking in our top-selling Ooni Koda 16, or the built-in thermometer, larger cooking space for maximum heat retention, and ViewFlame glass door technology seen in our latest Ooni Karu 16 Multi-Fuel Pizza Oven. Our amazing team of engineers is constantly innovating to really level-up the outdoor cooking experience for everybody.
Darina Garland: It was a very challenging time during the pandemic and the world wanted a way to connect with their friends and families in a safe and meaningful way. Cooking in an Ooni pizza oven encapsulated that — with hospitality being closed or limited, it gave people the opportunity to socialise safely outdoors and try something new. People also wanted to spend time learning new skills, and the breadth of pizza making—similar to the the rise in the popularity of bread-making—gave people an endless topic to experiment with — and lots of delicious, edible results.

Darina Garland: Ooni has been fortunate to experience extreme growth over the past 18 months, in the headwind of some tricky supply chain challenges, but we worked closely with our manufacturing partners to rapidly scale up their production capacities through investment in additional production facilities and team growth.
Like every business, Ooni faced some global shipping challenges but thankfully we’re now in a position where stock levels are back up and we’re able to cater to the demand of the global pizza-making community.
Finally, can you share one or two of your favorite Ooni success stories. I’ve seen businesses that run off Ooni ovens here in LA (at the famous Smorgasburg market). Who’s putting them to work in interesting ways?

Darina Garland: It’s truly incredible to see how Ooni has changed peoples’ lives. There are thousands of people who’ve taken up pizza-making as part of a career change and who now focus on using Ooni products to bring the joy of pizza to the world.
One of our favorite success stories is NYC-based pizzaiola Miriam Weiskind. Miriam is an extraordinary human who suffered the tragic loss of her mom during Covid. She battled through her grief by baking 5, 000 pizzas in her tiny apartment and giving them away to people who had lost their jobs and were struggling to make ends meet. Her pizzas were so amazing (she worked for legendary Scott’s Pizza Tours, and Paulie Gee — so she knows her stuff) that her waiting lists blew up and her pizza was the most sought-after in the city. Many recipients of free pizza then came back to not only pay retrospectively for their pies, but to pay it forward to others in need.
Miriam has successfully run some amazing pop-ups in NYC using Ooni ovens (topping over 5, 000 bakes) and is now raising funds for her brick-and-mortar Kickstarter campaign, so she can bring that pizza joy consistently to her community. We are so proud to support her journey and can’t wait to see what the future holds for her. She embodies the Ooni values of passion, kindness and ambition, and is just a supremely talented pizzaiola who approaches her craft with love. She also wants to share her knowledge with others, her enthusiasm is contagious and will inspire a whole new generation of pizza-makers.We Tested Backyard Pizza Ovens—Here Are Our 3 Favorites Our top picks are the Roccbox Portable Wood and Gas Pizza Oven and Ooni Karu 12 Multi-Fuel Pizza Oven.

Since this review was originally published, Blackstone has discontinued its pizza oven (which was one of our top picks). Uuni rebranded as Ooni, and the model we tested has been replaced by newer ones. This review was originally written for the Ooni 3, which is no longer available. We have replaced the product links with the Ooni Karu, which has a similar design, and updated the price below and added some information on the Karu, but have otherwise left the original text for the Ooni 3. We will be re-testing pizza ovens and will update this article.
Are Backyard Pizza Ovens Worth It? — Gozney, Ooni Backyard Pizza Ovens
I've always contended that pizza is the one food I could never get sick of, and if you've been following my Instagram feed, you'll know that I've recently been putting that claim to the test. I've had pizza coming out of my ears. There were days when I
